Honey bees collect pollen, a protein source to feed the babies, nectar, a carbohydrate to fuel their foragers and brood, and propolis a sticky sap material they use to seal up air gaps in their hive.
When we are absolutely sure the bees have more than enough for their own survival, we harvest the extra. Honey comb is the most nutritious way to consume honey and that is what we harvest and sell.
